FRITTATA



Here is a wonderful frittata that we had a few weeks ago. Nice eggy, bacon-yum, cheesey flavor and the bacon just topped it off. The good thing it is on the lighter side!

8 eggs
2 Tbsp non fat milk
3/4 cup low fat cheddar, shredded (divided)
1/2 cup of crumbled bacon
1/2 cup white mushrooms, sliced
1/4 sweet yellow onion, diced
1 tsp butter
Salt & pepper to taste
Green onion for garnish

Preheat the oven to 350 degrees. Melt the butter in the skillet over medium heat. Add onions & mushrooms and saute until tender, remove from heat & set aside. In a large bowl, beat the eggs and milk together. Add 1/2 cup of cheese, bacon, mushrooms, onions, salt and pepper to taste. Coat a tart or pie pan with cooking spray and add the egg mixture. Bake at 350 degrees for 20 minutes. Top the frittata with the remaining 1/4 cup of cheese and return to the oven for 10 additional minutes. Remove from the oven cool for 5 minutes before cutting. YUMMY!

I have never made a fritata before. The photo looks so yummy---I think I will give it a try.
